I have no idea why it took me this long to think of it (maybe because I'm not a huge fan of them), but for lunch yesterday and today, I made some pitas for Colson and he couldn't get them into him fast enough! And it was soooo simple! Yesterday I sauteed red peppers and carrots, sliced some marble cheese, put it all into half of a whole wheat pita, broiled it for the cheese to melt and cut it into triangles for easy handling. Today I spread cream cheese and then added tomato and avocado and there wasn't a crumb left! I'm actually excited to think of something new to put into it tomorrow ... I'm thinking peanut butter, banana and unsalted sunflower seeds (not sure if he's even old enough for them, but he sure loves them!) Colson isn't a hugely picky eater (meaning he actually tried to eat my toe when it was hanging off the couch and got in his mouths reach ... seriously, if it's near his mouth, he'll try to eat it), so I'm not overly surprised that he ate it, I just can't get over how fast it was gone. Just another idea for your little ones.
Our boys all of them even daddy love them to no end...I cut them in half stuff them w/left over meats and cheese and lettuce ...or I do grilled ...I've even cute up and deep fryed them and put some sugar on them sounds weird but they loved it..

When I taught Pre K one year their favourite snack was peanut butter and honey pizza. My TA just took tortillas and spread peanut butter and honey on them. She put another one on top and cut them into triangles. They LOVED them! (obviously we didn't have any nut allergies that year)
Jami - you're allowed PB as long as there's no nut allergies in the class? If there's even a kid with a nut allergy (no matter what class), you're not allowed PB is any class in the schools around here. When I was a kid we lived off of PB&J sandwiches at school.
